Italian Sausage Pizza Soup submitted by Peg Lairmore

Ingredients:
1 POUND ITALIAN SAUSAGE (CASINGS REMOVED)
1 MEDIUM ONION, CHOPPED
1 MEDIUM EACH, GREEN, YELLOW, AND RED PEPPER, CUT IN STRIPS
1 15 OZ CAN GREAT NORTHERN OR CANNELLINI BEANS, DRAINED AND RINSED
1 CAN (14 OZ) DICED TOMATOES, UNDRAINED
1 14 OZ JAR PIZZA SAUCE
2 TSP. ITALIAN SEASONING
2 GARLIC CLOVES, MINCED
2 14 OZ CANS BEEF BROTH
1 PKG CAESAR SALAD CROUTONS
SHREDDED PART-SKIM MOZZARELLA CHEESE

Cooking Instructions:

  • Crumble sausage in skillet and cook until no longer pink.  Add onion and peppers and cook them to crisp-tender.  Put all into a 6 qt slow cooker.
  • Add next five ingredients and broth.  Cook, covered, on low for 6-8 hours.  Serve with croutons and cheese.
  • IF you like pepperoni on your pizza, you can add pepperoni (LIGHT CHOP) to this soup.  DO PUT IT INTO THE MICROWAVE FOR ABOUT 20 SECONDS BEFORE ADDING TO SOUP TO MELT OFF SOME OF THE GREASE.
